Pistachio Crack

This stuff was a “happy accident”. Working as a baker for his friend’s cafe, he was trying to get rid of a case of hardened brown sugar. Dave tried to make some dulce de leche……and basically it doesn’t work because of the acidity of the sugar curdles the milk. Ok, next Dave was going to make caramels with the left over 8lbs of sugar, and having great pistachios and really good upstate butter, and making it into a crunchy toffee instead of a chewy caramel, and topping it with sea salt, Pistachio Crack was born.
